If you have always wanted to uncover the key to perfect French bread, then you have come to the right place. Join Benjamin to discover his years of secrets to mastering the art of making the perfect French bread, and learn that certain ‘je ne sais quoi’ that makes it so good.

First, Benjamin will help us understand what makes French bread stand out (is it the ingredients, the process, the external conditions, the “levain”, …?).  Next, he will explain his daily process to “petrir”, pre-shape, and shape his dough. There is so much to discuss and discover, so make sure you prepare all your questions for our Q&A session at the end. It will be fascinating!

Benjamin Vitale

Benjamin Vitale is the “Chef Boulanger” of : Mica Patisserie ; King Street Bakery & Montrachet Restaurant
He has been in Australia since September 2018. He discovered the craft through an internship when he was 16. At the age of 17, he began a two-year apprenticeship at the school Grégoire-Ferrandi in Paris, including working in a Paris bakery with Eric Kayser. Following this he continued learning the craft through a further two years of training. Benjamin decided to ‘follow the wind’ and come to Australia where he enjoys working with Shannon and the rest of the King Street Bakery team to showcase French bread and French products.
