Originally from the charming city of Nancy in the Lorraine region, adjacent to France’s famous Champagne region, Julian began exploring the world at 21. He embarked on a hospitality career in Thailand and arrived in Sydney 12 years ago, where he worked at Still Bar and Grill for a year before moving to Brisbane to help open Pony Dining. He fell in love with Brisbane’s quality of life, welcoming people, and the abundant opportunities it offered. Five years ago, Julian joined Noble Spirits and Voila Wines, merging a lifelong passion for food, cooking, and wine with professional life. His interest in cooking began in childhood, though initially, he was deterred from pursuing it professionally due to the demanding nature of the culinary industry. However, in Australia, Julian realised the industry’s potential, recognising how his background and passion could be highly valued. For the past 12 years, Julian has been immersed in Brisbane’s vibrant food and wine scene, collaborating with top-tier chefs and sommeliers, continuously driven by a dedication to the culinary arts and the dynamic Brisbane community. The wines will be exclusively supplied by Voila! Wine Company, a collaboration between Borderac Crus et Vins, a renowned Bordeaux négociant since 1997, and a passionate wine enthusiast from Provence.
