Join Julien Sion, Shannon Kellam and Benjamin Vitale from King Street Bakery in this one hour cooking demonstration. Beginning with the famous sourdough bread before leading into brioche, croissants and danishes, Julien, Shannon and Benjamin will guide you through each step of the baking process.

Learn the best techniques for mixing the dough, shaping, rolling and preparing for presentation. And don't be concerned, you won't leave without sampling the goods!

Shannon Kellam

Shannon Kellam is a multiple award winning chef with an illustrious international career.  He began his career as a chef right here in Brisbane at Raphael's, the Brisbane Sheraton Hotel and Oxley's on the River. He achieved his dream of becoming chef/owner of Raphael's before taking his remarkable culinary skills overseas.
He has lived in France and competed in the Culinary Olympics and the iconic  Bocuse d’Or, winning many awards and medals. His continuous winning streak saw him take the title of Chef of the Year in Queensland in 2018.
in 2015 Shannon became the chef and owner of the acclaimed Montrachet Restaurant in Brisbane, where he showcased excellent French traditional cuisine with the added elegance and subtlety of modern French cuisine. In 2017 Shannon opened the Montrachet boulangerie, which later morphed into King Street Bakery. His dedication to his craft over the years has resulted in only the best cuisine for his valued customers.

Julien Sion

Julien Sion is the head pastry chef at King Street Bakery and has been in Australia for a year and a half. At 16 he began his internship at Lenôtre in Paris, one of the best bakery and pâtissière in the world. After spending five years in Paris and two years in the south of France with the same company, he became in charge of one of the outlets in Nice. Following a move to Monaco, he worked for five years in the Nobu restaurant at the Fairmont Monte Carlo hotel. For that reason, Julien loves Japanese culture and food its ties to French pastry.
Benjamin Vitale
Benjamin Vitale is the Chef Baker at King Street Bakery and has been in Australia since September 2018. He discovered the craft through an internship when he was 16. At the age of 17, he began a two-year apprenticeship at the school Grégoire-Ferrandi in Paris, including working in a Paris bakery with Eric Kayser. Following this he continued learning the craft through a further two years of training. Benjamin decided to 'follow the wind' and come to Australia where he enjoys working with Shannon and the rest of the King Street Bakery team to showcase French bread and French products.
