Raclette is a semi-hard Swiss cheese made from Alpine cow milk. The dish, raclette, so named because the ‘raclette’ cheese is the main ingredient. It is indigenous to parts of Switzerland and also popular in the French region of Savoie.
The raclette cheese round is heated, then scraped onto diners plates. It is usually served with small firm potatoes, gherkins (cornichons), pickled onions, and dried meat (salami, jambon cru). It is often served with herbal tea or white wine to drink.
